Ingredients
- 1 head iceberg lettuce, washed and cut into wedges (4-6 wedges per head)
- ¼ cup Green Goddess dressing
- ½ cup cherry tomatoes, washed and halved
- ½ cup English cucumbers, thinly sliced
- ½ cup Parmesan cheese, shaved
- ¼ cup bacon bits (crispy)
- Fresh parsley (for garnish)
- For the Puff Pastry Broomstick:
- 1 sheet puff pastry (store-bought), thawed
- 1 egg white, beaten
- Coarse salt
Directions
- Make the Puff Pastry Broomsticks:
- Preheat your oven to 375°F
- Lightly flour your board and rolling pin. Unfold the puff pastry sheet and cut along the fold to separate each sheet into three sections. One section will be used to make the handles, and one section will be used to make the bristles.The remaining section will not be used.
- Cut one section into handles (approximately 3 ½” x 1” lengths). Set aside.
- To make bristles, use a pizza cutter to make matchstick strips. Make 9 longer strips for the coil around the bristles.
- Twist the handle slightly. Arrange matchstick pieces around the base of the handle. Gently pinch. Wrap the longer stripe around the top of the bristles and pinch gently to adhere. Repeat until all nine broomsticks are assembled.
- Line a baking sheet with parchment paper. Lightly coat with an egg wash and sprinkle coarse salt. Bake for 15 – 20 minutes or until golden.
- Place on a baking rack to cool to room temperature.
- Prepare the Salad:
- Start by cutting the iceberg lettuce into wedges (4-6 per head depending on the size). Place the wedges on serving plates.
- Drizzle each wedge with dressing.
- Top with cherry tomatoes, cucumber slices, Parmesan shavings, and crispy bacon bits.
- Assemble the Salads:
- Once the puff pastry broomsticks have cooled a bit, place one on each plate alongside the wedge salad.
- Serve immediately and enjoy the whimsical presentation!
