1. Cut Brie – Cut out a shell shape from a round of brie using a cookie cutter. Place in the center of the board.
2. Make Meat Roses – Using a champagne flute, place sliced meat over the rim of the glass. Add slices staggering so they overlap each other. I typically use 3 or 4 slices of meat for the first layer. Repeat a second layer and continue the process until you are happy with the fullness of the rose. Place on the upper left hand side of the board.
3. Add cheeses – Cut the Swiss cheese into triangle shaped wedges and arrange on the left side bottom and right hand top edges of the board. Reserve some slices for later. Slice the blueberry goat cheese into rounds and arrange on the top right hand side of the board.
4. Add Fruits – To cut kiwi, use a short paring knife to make small zigzag cuts around the perimeter of the kiwi. Be sure not to cut only half way through. Place kiwi and clusters of grapes on the bottom left hand and top right hand edges of the board.
5. Add Crackers & Olives – Fill in the edges of the board with olives and crackers. Add a few crackers to the top right hand quarter of the board and some more Swiss cheese wedges to right hand bottom quarter of the board.
6. Add Berries – Dot Swiss cheese with blackberries and add strawberries to the center of the board allowing room for salami.
7. Add Salami Coral – Carefully fold salami into quarters and place in open spaces in the center of the board.
