Tiana’s beautiful ball gown inspired these cupcakes. Light lemon cake is filled with fresh lemon curd and topped in layers of lemon infused buttercream. The cupcakes are adorned with green buttercream and sugar pearl flowers and iridescent sugar. This recipe was featured on our Princess & the Frog Disney dinner.
Tiana Cupcakes
Makes 8 cupcakes
Ingredients:
- 8 lemon cupcakes (we like this recipe from Sally’s Baking Addiction)
- ½ cup lemon curd
- 2 cans vanilla frosting
- ¼ teaspoon lemon extract
- Yellow gel food coloring
- Green gel food coloring
- Candy pearls
- Iridescent sanding sugar
Instructions:
- Fill cupcakes – Bake and cool cupcakes. Fill a pastry bag fitted with a filling tip with lemon curd. Gently push tip into the center of the cupcake and fill with lemon curd. Set aside and repeat with remaining cupcakes.
2. Prepare frosting – Transfer 1 ½ cans of vanilla frosting to a medium mixing bowl or to the bowl of a stand mixer fitted with a paddle attachment. Add ¼ teaspoon of lemon extract and mix until thoroughly combined and fluffy. Add yellow gel coloring and mix until thoroughly combined. Add lemon frosting to a pastry bag fitted with a star tip. Next, color green frosting using the process and add to a pastry bag fitted with a star tip. Set aside.
3. Decorate cupcakes – Top cupcakes with yellow frosting. Using the green frosting make small flowers on top of the yellow frosting. Add candy pearls to the center of each green flower. Dust the tops of the cupcakes with iridescent sanding sugar. Add toppers and cupcake wrappers if desired.
