Learn to make:
- Cucumber & herbed cream cheese on pumpernickel
- Egg salad with pea shoots on white
- Cherry tomatoes stuffed with herbed cream cheese
Classic Egg Salad Tea Sandwich
Ingredients
- 6 hard boiled eggs, peeled and coarsely chopped
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Salt & pepper to taste
- 1/4 cup green olives, sliced
- 12 white bread slices, crusts removed
Instructions
Combine all ingredients. Spread on half of the bread slices and cover pea shoots. Top with second slice of bread. Trim off bread crusts and slice into triangles.
Cucumber and Dilled Cream Cheese Tea Sandwich
Ingredients
- 6 oz. cream cheese
- 1/4 cup fresh dill, finely chopped
- Salt & pepper to taste
- English cucumber, cut into 1/2″ pieces
- 12 pumpernickel bread slices, crusts removed
Instructions
Place cream cheese, dill, salt & pepper in a bowl and stir with a rubber spatula until combined. Add cheese mixture to a piping bag fitted with a star tip.
Cut pumpernickel into circles using a cookie cutter. Pipe cheese mixture on top of bread rounds. Top wit cucumber and sprinkle with additional dill for garnish.
Cucumber and Dilled Cream Cheese Tea Sandwich
Ingredients
- 2 oz. cream cheese
- 1 tablespoon fresh dill, finely chopped
- Salt & pepper to taste
- Cherry tomatoes
Instructions
Place cream cheese, dill, salt & pepper in a bowl and stir with a rubber spatula until combined. Add cheese mixture to a piping bag fitted with a star tip.
Using a small pointed knife, cut out the center of a cherry tomato to create a reservoir for the cheese. Carefully pipe cheese into the tomato. Sprinkle with additional dill for garnish.
