These Little Mermaid cupcakes are flavored with apples, walnuts, raisins and cinnamon, filled with caramel, and topped with cream cheese frosting and a white chocolate star fish. These are absolutely delicious and adorable! This recipe was featured on our Little Mermaid Disney dinner.
Little Mermaid Cupcakes
Makes 12 Cupcakes
Ingredients
Cupcakes
- ½ cup cooking oil
- ⅔ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 1 cup apples, peeled and cut into ½” chunks
- ⅓ cup nuts
- 3 tablespoons raisins
- Caramel sauce
Cream Cheese Frosting:
- 1 8-ounce package of cream cheese
- 1 stick unsalted butter (½ cup), softened to room temperature
- 1 teaspoon vanilla extract
- 3-4 cups confectioners sugar
- White Chocolate Chips
- Wilton Sea Life Mold
- White Nonpareils
3. Fill Cupcakes – Prepare a pastry bag with a Bismark tip. We like the Wilton #230 Bismark filling tip. Fill a pastry bag with caramel sauce. When cupcakes are fully cool, use a sharp paring knife, cut a small divot in the center of each cupcake. Fill with caramel. Continue until all cupcakes are filled.
