Flatbread pizzas are fun to make and so versatile. They make a delicious family dinner but are also perfect as an appetizer. One of our favorite flatbread topping combinations is potato, pesto, artichoke heart, mushrooms, and tomato with fresh mozzarella. This recipe was featured on our Pinocchio Disney dinner.
Potato Pesto Flatbread
Ingredients
2 flatbread pizza crusts
Use our recipe or purchase flatbread crusts at your local supermarket.
Toppings
1 cup thinly sliced cooked potato
2/3 cup pesto
8 ounces fresh mozzarella cheese, sliced into 1/4 inch thick slices
1/2 cup thinly sliced fresh tomatoes 1/2 cup cremini mushrooms, sauteed
1/2 cup canned artichoke hearts, chopped
optional: sliced olives
optional: crushed red pepper flakes
Directions
- Prick a few holes in the flatbread crust with a fork. Drizzle or brush each with a ½ teaspoon of olive oil. Spread about 1/3 cup of pesto on each then top with mozzarella, tomatoes, potatoes, artichoke hearts, and sauteed mushrooms. Add sliced olives if desired.
- Bake for 15-20 minutes or until the crust and toppings are browned to your liking. Remove from the oven and, if desired, finish with a sprinkle of crushed red pepper. Slice and serve warm.
