Ingredients
For the Chicken Kebabs
- 2 lbs chicken breast or thighs, cut into bite-sized pieces
- 1 fresh pineapple, cubed
- 2 red bell peppers, cut into chunks
- 2 green bell peppers, cut into chunks
- 1 red onion, cut into chunks
- Metal skewers or wooden skewers soaked in water
For the Marinade
- ⅓ cup ketchup
- ⅓ cup soy sauce
- ⅓ cup brown sugar
- ¼ cup pineapple juice
- 2 teaspoons sesame oil
- 1 teaspoon fresh ginger, minced
- 3 garlic cloves, minced
- 1 teaspoon sriracha
For the Coconut Fried Rice
- 1 ½ cups jasmine rice
- 2 cups water
- 1 cup coconut milk
- 1 tablespoon canola oil
- 2 tablespoons soy sauce
- ½ cup vegetable broth
- 1 yellow onion, chopped
- 1 yellow pepper, chopped
- 1 orange pepper, chopped
- 3 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 2 teaspoons curry powder
- Salt and pepper to taste
- Optional garnish: Chopped cilantro
Directions
Step 1: Marinate the Chicken
- In a bowl, whisk together ketchup, soy sauce, brown sugar, pineapple juice, sesame oil, garlic, ginger, and sriracha.
- Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
Step 2: Make the Coconut Rice
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce to a simmer and cover.
- Cook for 15–20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.
- Heat a large skillet on medium-high heat with about a tablespoon of canola oil.
- Add onions, pepper, garlic, ginger, and curry powder. Saute until fragrant for about 2-3 minutes.
- Add another tablespoon of canola oil. Add the rice to the vegetable mixture and stir vigorously for 2-3 minutes. Then add the soy sauce and a tablespoon or more of vegetable broth to moisten the rice. Adjust seasoning with salt and pepper.
- Garnish with chopped scallion and serve.
Step 3: Assemble the Kebabs
- Thread marinated chicken pieces onto the skewers, alternating with pineapple cubes, bell peppers, and red onion.
- Repeat until all ingredients are used.
Step 4: Grill the Kebas
- Preheat your grill to medium-high heat and lightly oil the grates.
- Cook the kebabs for 5 minutes and baste with marinade. Continue to turn occasionally until the chicken is cooked through and has a nice char.
Step 5: Serve and Garnish
- Serve the kebabs on a platter with coconut rice on the side.
- Garnish the rice with chopped cilantro if desired.
