Pizzelles are traditional Italian waffle cookies that originated in the Abruzzo region of Italy. They are delicate and tasty and can be used in a variety of ways. Our favorite way of eating Pizzelles is as an ice cream sandwich. Try vanilla ice cream with rainbow sprinkles, lemon ice cream with yellow jimmies, or chocolate ice cream with crushed oreos. These treats were featured on our Pinocchio Disney Dinner.
Pizzelle Ice Cream Sandwiches
Makes 5 Sandwiches
Ingredients
- 10 Vanilla Flavored Pizzelle
- 1 Pint Ice Cream
- 1 cup of colored sprinkles
Directions
- Line a baking sheet with waxed paper
- Place five full scoops of ice cream on the waxed paper; use a mug or cup to push them down into 1” thick circles; Place in the freezer to harden for 30 minutes.
- Take ice cream rounds out of the freezer; Using a 3-inch round cookie cutter or biscuit cutter trim rounds so they are uniform; Place in the freezer to harden for another 30 minutes.
- Take ice cream rounds out of the freezer; roll edges in sprinkles and immediately place between two Pizzelle cookies.
- Serve immediately.
