Pineapple Upside Down Cake Dole Whip Sundaes are a Disney fan favorite for good reason. Make these delicious treats at home with our easy copycat recipe. This recipe was served on our Adventureland party.
Pineapple Upside Down Cake Dole Whip Sundaes
Makes 24 sundaes
Ingredients:
- 1 yellow cake mix
- ½ cup vegetable oil
- 1 cup pineapple juice (reserved from canned pineapple rings)
- 3 eggs
- 1 cup brown sugar
- 1/4 cup unsalted butter, melted
- 3 cans (15 oz) pineapple rings in juice, drained
- 1 jar maraschino cherries without stems, drained
- Pineapple Dole Whip or sorbet
- 48 Nilla Wafers
Equipment:
- 2 Silicone Muffin Pans
- 2-inch round biscuit or cookie cutter
- Piping bag fitted with a star tip
Instructions:
- Make cake batter – Combine yellow cake mix with vegetable oil, 1 cup pineapple juice, and 3 eggs in a large bowl. Beat vigorously by hand for 2 minutes. Alternately, use a hand mixer or stand mixer.
2. Prepare cakes – Pour a small amount of melted butter in the bottom of each muffin pan reservoir. Sprinkle with brown sugar. Using a 2-inch cutter, trim pineapple rings and place one pineapple ring and one cherry over the butter and powdered sugar. Pour cake batter over the pineapple and cherries. Fill each reservoir ⅔ full.
3. Bake – Preheat oven to 350 degrees. Bake cakes for 30 minutes or until a toothpick inserted in the middle of the center cake comes out clean. Remove from oven and immediately run a knife around the edge of each mini cake. Place a tray over each muffin pan and invert. Allow to rest for a few minutes so brown sugar topping can drizzle over cakes. Remove from pans and allow to cool on a rack for 30 minutes.
4. Serve – Place each mini cake on a serving plate or bowl. Fill a piping bag with Dole Whip or pineapple sorbet. Pipe Dole Whip on top of each mini cake. Add two Nilla Wafers for Mickey ears if desired.
