Entertain with Magic
Ohana Bread Pudding is a Disney fan favorite. This warm bread pudding is topped with bananas fosters sauce, and a scoop of vanilla ice cream. We modified Disney’s recipe to create individual Ohana Bread Puddings. They were the perfect portion size and so easy to serve. This dessert was featured on our Moana Disney dinner.

Note: This recipe was adapted from Disney’s recipe to offer a version of bananas foster sauce using rum extract.

Instructions:
1. Prepare bread pudding batter – In a large mixing bowl, mix eggs, milk, salt, sugar, and nutmeg. Set aside. Cut bread in 1-inch cubes and place on a cookie sheet. Bake until lightly toasted in a 350 degree oven, about 10 minutes. Remove from oven. Add bread to egg mixture and stir to coat.
2. Bake bread puddings – Lightly grease a silicone muffin pan. Using a muffin scoop, add a large scoop of bread pudding mixture to each reservoir. Fill about ⅔ full. Bake at 325 degrees for 30 minutes or until puffy and golden brown on top.
3. Make sauce – In a medium saucepan, melt the butter over medium heat. Add the sugars and corn syrup. Stir until dissolved. Add rum extract, heavy cream, vanilla and stir to combine. Bring the mixture to a simmer and stir in the bananas. Cook 2-3 minutes, until the bananas are warmed through.
4. Serve – Allow bread puddings to sit for 5 minutes. Gently cut around the edges to loosen and remove from pan. Serve each with warm bananas foster sauce and a scoop of vanilla ice cream. Sprinkle with walnuts or warm caramel sauce if desired.
