This delicious salad is light, flavorful, and a perfect compliment to stir fry. It’s packed with fresh veggies – Napa cabbage, cucumbers, avocados, green onions – and the sliced almonds and crispy noodles give it a bit of crunch. This recipe was featured on our Mulan Disney Dinner.
Asian Napa Cabbage Salad
Ingredients
Asian Vinaigrette:
- 1 ½ tablespoons rice vinegar
- 1 ½ tablespoons soy sauce
- 1 tablespoon honey
- 2 tablespoons cooking oil
- ½ teaspoon sesame oil
Asian Napa Cabbage Salad
- 4 cups Napa cabbage, shredded
- 1 green onion, sliced (white and green parts)
- 1 cup thinly sliced English cucumber
- 1 avocado, cubed
- 1 cup shelled Edamame, fresh or frozen
- ¼ cup almonds, thinly sliced
- 1 cup crunchy chow mein noodles
Instructions
- Make vinaigrette – Whisk together rice vinegar, soy sauce, honey, oil and toasted sesame oil. Set aside.
- Prepare edamame – In a small saucepan, bring 2 cups of water to boil. Add shelled edamame. Boil for 3-4 minutes. Remove from heat, drain, and set aside.
- Make salad – Combine cabbage, green onions, cucumber, edamame, avocado, noodles, and almonds in a large mixing bowl. Pour vinaigrette over salad ingredients. Toss until all ingredients are well combined.
