Monster Mousse
Makes 4 cauldrons of mousse
Ingredients:
- 1/2 cup whipping cream
- 1/2 cup white chocolate chips
- 4 ounces cream cheese
- 1 tablespoon powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Vanilla Frosting
- Green gel food coloring
- Small candy eyes
- Green sprinkle mix
Equipment:
- Small plastic serving cauldrons
- Piping bag fitted with coupler and round tip
- Piping bag fitted with coupler and star tip
Instructions:
- In the bowl of a stand mixer fitted with a whisk attachment, beat the whipping cream at high speed until stiff peaks form. Remove from the bowl and set aside.
2. Next, add the cream cheese and 1 tablespoon of powdered sugar to the bowl of the stand mixer and beat until light and fluffy.
3. Melt the white chocolate in the microwave stirring after each 30-second interval. Add the white chocolate, vanilla extract and salt to the cream cheese mixture. Beat on medium speed until smooth and well combined.
4. Gently fold the whipped cream into the cream cheese mixture by hand with a spatula. Add a scant bit of green gel food coloring and stir gently to combine thoroughly. Do not over mix.
5. Add the mousse to a piping bag fitted with a coupler and a round tip. Pipe into four small serving cauldrons. Place in the refrigerator until completely set, 1-2 hours.
6. In a medium bowl, combine vanilla frosting and green gel coloring. Mix until thoroughly combined. Add to a piping bag fitted with a coupler and star tip. Pipe frosting onto mousse using a swirling motion to create the look of a foaming potion. Add small candy eyes and green sprinkles.
