These Mickey Santa cupcakes are festive and delicious! Moist chocolate cake was filled with marshmallow cream. The cupcakes were topped with red buttercream and embellished with white trim, a white ball atop each hat, and some Mickey ears. Glue some tiny white buttons to each cupcake paper for a fun detail. These cupcakes were featured on our Mickey’s Once Upon a Christmas movie night.
Mickey Santa Cupcakes
Makes 12 cupcakes

- Cupcake pan
- Red Cupcake Liners
- 3 Pastry Bags fitted with Couplers
- Large Round Tip
- Large Star Tip
- Medium Star Tip
- Hot Glue Gun
- Small White Buttons
Ingredients
- Chocolate cake mix
- Marshmallow cream
- 3 cups confectioner’s sugar
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 1 teaspoons vanilla
- 1 tablespoon milk or heavy cream
- Pinch of salt
- Wilton Red Icing Color
- Red Sanding Sugar
- Black Candy Melts
- Bake cupcakes – Line a cupcake pan with red cupcake papers. Preheat the oven and prepare chocolate cake mix according to package instructions. Fill each cupcake reservoir 2/3 full. Bake according to package instructions.
- Fill cupcakes – Prepare a pastry bag with a large round tip. Fill the pastry bag with marshmallow cream. When cupcakes are fully cool, use a sharp paring knife to cut a small divot in the center of each cupcake. Fill with marshmallow cream. Continue until all cupcakes are filled.
3. Make buttercream – To prepare frosting, cream butter in a medium bowl using a stand mixer with a paddle attachment or a hand mixer. When light and fluffy, add 3 cups of confectioners sugar and salt bit by bit until fully combined. Add 1 teaspoon of vanilla and 1 tablespoon of milk cream until completely combined. If buttercream seems too thick, you may add another tablespoon of milk or cream. If it seems runny, you may add more confectioners sugar. Remove 1/4 cup white frosting and place in a small bowl. Color remaining frosting red using Wilton red gel icing coloring.
4. Frost cupcakes – Prepare a pastry bag with a large star tip. Fill the pastry bag with red frosting. Frost cupcakes using a star tip tapering toward the top to create a hat shape. Next prepare a pastry bag with a small star tip and fill with white frosting. Add a small white ball shape to the top of each cupcake.
4. Decorate cupcakes – Insert two black candy melts into the frosting of each cupcake to resemble Mickey’s ears. Finally use a hot glue gun to add two small white buttons to the front of each cupcake.
