Make these delicious Mickey ice cream cookie sandwiches at home. A classic Toll House Cookie crust filled with chocolate encrusted ice cream creates the perfect combination.
Mickey Ice Cream Cookie Sandwich
Makes 4 Ice Cream Cookie Sandwiches
Ingredients
Toll House Pan Cookies:
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chocolate chips
- 1 cup M & Ms candies
Filling:
- Ice Cream
- Mini Chocolate Chips
Instructions
- Make cookie batter – Preheat oven to 375 degrees. In the bowl of a stand mixer fitted with a paddle attachment, cream butter and sugars. Add vanilla and eggs. Mix to combine. Whisk together flour, baking soda, and salt. Add to wet mixture and combine. Slowly add chocolate chips and mix until combined.
2. Line a 10 x 15-inch jelly roll pan with parchment paper. Spread into prepared pan and smooth. Press M & M’s candies into batter. Bake at 375 degrees for around 20 to 25 minutes. Remove from oven and allow to cool completely on a wire rack.
3. Prepare ice cream filling – In the meantime, cut two large squares of waxed paper. Scoop approximately 12 scoops of your favorite ice cream onto a sheet of waxed paper. Top with a second sheet of waxed paper and press into a 1-inch thick layer using your hands or a rolling pin. Using a 4-inch Mickey cookie cutter, cut out four Mickey shaped ice creams. Place Mickey ice creams on a wax paper lined plate and transfer to the freezer to harden.
4. Assemble – To assemble, cut our eight cookie Mickeys using a 4-inch Mickey cookie cutter. Set aside. Fill a shallow bowl or plate with mini chocolate chips. Gently coat the edges of Mickey ice creams with mini chocolate chips. Place one Mickey ice cream on top of a cookie and top with a second cookie. Serve immediately.
