Fill your home with the sweet and spicy smell of fresh gingerbread! Enjoy these Disney Parks copycat Mickey Gingerbread Cookies with this quick and easy tutorial using gingerbread mix.
Mickey Gingerbread Cookies
Makes 8-12 cookies
COOKIE INGREDIENTS:
- 1/2 cup (1 stick butter), softened to room temperature
- 1 egg
- 2 teaspoons water
- Betty Crocker Gingerbread Cookie Mix
- 1 tablespoon cream or milk
- 3 cups flour
- 3 teaspoons baking powder
COOKIE INSTRUCTIONS
- Make cookie batter – In the bowl of a stand mixer fitted with a paddle attachment, cream the butter. Add the egg and water. Add the cookie mix to the creamed mixture and combine on low speed. Dough will be thick and sticky. Shape mixture into a flat disk and wrap in plastic wrap. Place in the refrigerator and chill at least 3 hours or overnight.
2. Bake cookies – Preheat the oven to 375 degrees. Prepare a baking sheet with parchment paper. Remove dough from refrigerator, unwrap, and place on a generously floured surface. Roll to 1/4 inch thickness and cut out Mickey faces or Mickey gingerbread men. Place cookies on a prepared baking sheet 3 inches apart. Bake for 8-12 minutes and set around the edges. After one minute, remove and place on a baking sheet to cool.
3. Decorate – After cookies are completely cooled, decorate with your favorite frosting using the tutorials below. Our favorite recipe for royal icing is below.
ROYAL ICING:
- 4 cups confectioner’s sugar
- 3 tablespoons meringue powder
- 6-8 tablespoons warm water
Make Royal Icing – Combine confectioner’s sugar, meringue powder, and 6 tablespoons of warm water in the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed for approximately 2 minutes. When you lift up the whisk attachment, the royal icing should drizzle down. Add more water 1/2 tablespoon at a time to achieve desired consistency. If icing is too thin, add more confectioner’s sugar. Place

- White Royal Icing (see recipe above)
- Red Gel Writing Pen
- Black Gel Writing Pen
- Round confetti sprinkles in green
- Add white Royal Icing to a piping bag fitted with a coupler and small round tip. Outline the cookies with white icing. Add white details to the arms, legs, and ears.
- Use a red gel icing pen to add Minnie’s bow. Use white icing to add small dots to create a polka dot bow.
- Add eyes, nose, and a smile using a black gel icing pen. Add cheeks with a red gel icing pen.
- For Mickey & Minnie gingerbread men, add green candy buttons. Create a red bow tie on the Mickey gingerbread men.
