Makes 8 Cake Pops
Ingredients:
Instructions:
1. Crumble cupcakes into a medium mixing bowl. Add frosting and stir to combine. Roll 1 tablespoon of moist cake mixture into a ball. Place balls on a parchment lined baking sheet. Refrigerate until firm. Re-roll the chilled balls to smooth out, if needed.
2. Melt the vanilla candy coating according to package directions using a double boiler or microwave. Dip a cake pop stick about 1/2 inch into the coating, then insert into the center of the cake ball. Place back in refrigerator and allow to harden.
3. If necessary, re-warm the vanilla candy melts and pour into a juice glass or mug. Candy coating should be 3-4″ deep. Dip a chilled cake ball into the coating until completely covered. Allow excess coating to drip off. Place the dipped cake pop on a cookie sheet lined with waxed paper to harden.
4. While still wet decorate with sprinkles. Gently cut the edge of a candy melt to create a flat edge. Using a small amount of melted candy coating as glue, adhere the flat edge of an unmelted candy melt to the cake pop as an ear. Repeat with remaining cake balls. Add gold fondant bows for half the cake pops if desired.
