I’m a huge fan of a traditional Italian Caprese salad. We created a delicious salad for this menu inspired by the traditional Caprese salad but with a southwestern twist. Fresh juicy sliced tomatoes are topped with fresh cilantro and Queso Fresco and are dressed with a zesty cilantro-lime dressing. This salad was featured on our Coco Disney dinner. Mexican Caprese Salad
Ingredients
Salad
- Leaf Lettuce
- Sliced Tomatoes
- Cilantro leaves, chopped
- Queso fresco crumbled
Dressing
- ¼ cup cooking oil
- 3 tablespoons lime juice
- 3 tablespoons fresh cilantro leaves, chopped
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- Salt & pepper to taste
Instructions
Make dressing – Place cilantro leaves, garlic, lime juice, oil and cumin into a food processor and puree until smooth. Season to taste with salt and pepper.
Assemble salad – Arrange lettuce on a serving platter and top with sliced tomatoes. Sprinkle with Queso Fresco and chopped fresh cilantro. Add dressing just before serving.
