These Luca cupcakes are filled with mint cream and are so light and sweet! They’re topped with tri-color buttercream in blue, mint green, and aqua and are embellished with white chocolate star fish and shells, “seaweed,” and candy pearls. We created cupcake wrappers for them using watercolor paper in Luca’s color scheme of blue, green, and purple. These cupcakes were served on our Luca Disney dinner.

Ingredients
- 12 vanilla cupcakes {We like this recipe from Sally’s Baking Addiction}
- 1/2 cup + 1-2 tablespoons heavy cream (divided)
- 4 tablespoons cream cheese
- 1 teaspoons vanilla
- 3 cups + 2 tablespoons confectioners sugar (divided)
- 1 cup (2 sticks) unsalted butter, softened to room temperature
- 1/4 teaspoon mint extract
- Pinch of salt
- Wilton Icing Color: Kelly Green, Royal Blue, Sky Blue
- White Candy Melts
- Candy Pearls
- Haribo Sour Streamers (Sour Apple) cut into 1/2″ wide strip
- Make cream filling – In the bowl of a stand mixer combine 1/2 cup of heavy cream, 4 tablespoons cream cheese, 1/4 teaspoon of vanilla and 2 tablespoons confectioners sugar. Beat on high speed using a whisk attachment until stiff peaks form. Add kelly green food coloring to dye light green. Set aside.
- Fill cupcakes – Prepare a pastry bag with a round tip. Fill a pastry bag with cream filling. When cupcakes are fully cool, use a sharp paring knife, cut a small divot in the center of each cupcake. Fill with cream. Continue until all cupcakes are filled.
3. Make buttercream – To prepare frosting, cream butter in a medium bowl using a stand mixer with a paddle attachment or a hand mixer. When light and fluffy, add 3 cups of confectioners sugar and salt bit by bit until fully combined. Add 1 teaspoon of vanilla and 1 tablespoon of cream until completely combined. If buttercream seems too thick, you may add another tablespoon of cream. If it seems runny, you may add more confectioners sugar. Divide the buttercream equally into 3 bowls. Use food coloring to dye one bowl light green, one bowl aqua, and one bowl blue.
4. Decorate cupcakes – Frost cupcakes using a three color swirl decorating kit. Using the sea shell mold and candy melts, create shells. Add them to the top of the cupcakes. Dot with candy pearls and place sour apple Haribo Sour Streamer strips on top to resemble sea weed.
