Lightyear Galaxy Cupcakes

These Lightyear galaxy cupcakes are out of this world! The marbled cupcakes are filled with stars, topped with purple frosting & sprinkles, and decorated with Buzz’s wings. These cupcakes were served on our Lightyear party, but would be perfect for a Toy Story party too.

Makes 12 cupcakes

Ingredients:

1 Betty Crocker vanilla cake mix
1 cup water
½ cup vegetable oil
3 eggs
Green, purple, and blue gel food coloring
Star candy sprinkles
2 containers of purple Funfetti frosting with sprinkles

Instructions:

Make batter – Prepare cake batter according to package directions. Divide the batter into three bowls. Add a small amount of food coloring to each bowl. Set aside.

2. Bake – Preheat oven to 350 degrees. Prepare a cupcake pan with cupcake papers. Spoon 1 tablespoon of green batter into each cupcake paper. Add a tablespoon of purple and then of blue. Swirl gently with a toothpick. Bake cupcakes for 22-24 minutes or until a toothpick inserted into the center comes out clean. Transfer to a wire baking rack and allow to cool completely.

3. Decorate – Cut a small divot out of the center of each cupcake. Fill with star shaped candy sprinkles. Add purple Funfetti frosting to a piping bag fitted with a star tip. Top cupcakes with frosting and sprinkles. Add lightyear “wing” printables to the sides.
