Lemon bars are easy to bake and are the perfect dessert for a garden party or picnic. The soft lemon filling paired with the rich crumbly shortbread will bring a smile every time! These lemon squares were part of our lemon dessert trio featured on our Tangled Disney dinner.
Lemon Squares
Ingredients
Shortbread Base
- ½ cup unsalted butter, cubed
- 1 cup all-purpose flour
- ¼ cup confectioner’s sugar
Lemon Filling
- 1 teaspoon lemon extract
- 2 eggs, beaten
- 2 tablespoons all-purpose flour
- 1 cup granulated sugar
- ¼ teaspoon baking powder
Instructions
- Make Shortbread Base – Preheat the oven In a food processor combine cubed butter, flour and confectioner’s sugar. Pulse until the mixture resembles a coarse meal. Press into a 7 x 11” pan. Bake for 15 minutes at 325 degrees.
2. Make Lemon Topping – Sift together flour, sugar, and baking powder. In a stand mixer on medium speed, combine eggs, lemon juice, and lemon extract. Beat until well combined. Add flour, sugar, and baking powder mixture and mix until thoroughly combined.
3. Bake Lemon Squares – Preheat over to 350 degrees. Pour lemon topping over baked shortbread crust. Bake for 25 minutes. When cool, dust with additional confectioner’s sugar. Cut into squares.
