These luscious pumpkin spice flavored Colors of the Wind cupcakes have a creamy filling and are topped with cream cheese frosting and pastel candy feathers. We served them on our Pocahontas fall dinner.
They were inspired by Pocahontas but the pumpkin spice flavor combined with cream cheese frosting makes these cupcakes perfect for any fall themed party or dinner. Get our easy recipe below.
Colors of the Wind Cupcakes
Makes 24 Cupcakes
Ingredients
Cupcakes
- 1 box spice cake mix (16-18 oz) + ingredients listed in mix instructions
- 15 oz. canned pumpkin puree
- 3 eggs
Cream Cheese Frosting:
- 2 8-ounce package of cream cheese
- 2 sticks unsalted butter (1 cup), softened to room temperature
- 2 teaspoon vanilla extract
- 6-8 cups confectioner’s sugar
- Peach, pink, and mint green candy melts
- Silicone Feather Mold
- Feather Scrapbooking Paper for Wrappers (optional)
- Cupcake wrapper template (optional)
3. Make Frosting – Beat the cream cheese, softened butter and vanilla in a medium bowl until combined and smooth. You can either use a stand mixer or hand mixer. Gradually add confectioners sugar and mix until completely combined. Feel free to add more or less confectioners sugar to achieve your desired consistency.
4. Fill Cupcakes – Prepare a pastry bag with a Bismark tip. We like the Wilton #230 Bismark filling tip. Fill a pastry bag with 1 cream cheese frosting. When cupcakes are fully cool, use a sharp paring knife to cut a small divot in the center of each cupcake. Fill with cream cheese frosting. Continue until all cupcakes are filled. Save any extra frosting for the cupcake tops.
6. Assemble Cupcakes – Using your favorite tip, frost the cupcakes. Place three feathers on the top of each cupcake. If desired, create wrappers for the cupcakes using feather paper and this template (links above).
