Chess Board Tea Sandwiches

Ingredients

Pumpernickel Sandwiches

6 oz. cream cheese
1/4 cup fresh dill, finely chopped
Salt & pepper to taste
English cucumber, thinly sliced
12 pumpernickel bread slices, crusts removed

White Sandwiches

6 hard boiled eggs, peeled and coarsely chopped
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
Salt & pepper to taste
1/4 cup green olives, sliced
12 white bread slices, crusts removed

Garnishes

Green Olives, pitted
Cherry Tomatoes, washed and dried
Toothpicks

Directions

1. Make the Pumpernickel Sandwiches:

Place cream cheese, dill, salt & pepper in a bowl and stir with a rubber spatula until combined.
Spread bread slices with cream cheese mixture.
Top half of slices with thinly sliced cucumber.
Assemble sandwiches and cut into 2-inch squares.

2. Make the White Sandwiches:

Combine eggs, mayonnaise, Dijon, salt & pepper, and green olives.
Spread on half of the bread slices and cover with second slice of bread.
Slice into 2-inch squares.

3. Assemble Board:

Alternate sandwich squares into a chess board pattern.
Insert toothpicks into cherry tomatoes and green olives. Top pumpernickel sandwiches with tomatoes and white sandwiches with green olives.
