Entertain with Magic
Our rich and gooey cajun cheese artichoke dip from our The Princess & The Frog dinner is the perfect vegetarian starter for a southern feast! Serve this hot out of the oven with crisp veggies, crackers, or toasted baguette. Yum!
Ingredients
1 (14 ounce) can artichoke hearts, rinsed, drained, and diced
1 (8 ounce) brick of cream cheese
1 cup sharp cheddar cheese, shredded
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon cajun seasoning
1 tablespoon Tabasco sauce
Coarse salt and pepper to taste
2 tablespoons olive oil
1/2 red pepper, diced
1/2 onion, minced
1 rib celery, diced
3 cloves garlic, minced
1/4 cup Parmesan cheese, shredded
1/2 cup panko breadcrumbs
Directions
1. Preheat oven to 375 degrees.
2. In a large bowl, mix together cheese cream cheese, mayonnaise, sour cream, cajun seasoning and Tabasco. Season with salt and pepper to taste. Stir in cheddar cheese.
3. Meanwhile, heat skillet over medium heat. Add olive oil and saute pepper, onion, and celery, for 5 minutes. Add garlic and saute another 2 minutes.
4. Combine the vegetables with the artichoke hearts. Fold vegetable mixture into cheese mixture. Stir to combine.
5. Transfer the dip to a 1 quart casserole dish. Top with Parmesan cheese and panko bread crumbs.
6. Bake for 30 minutes until cheese is melted and dip is bubbly.
7. Serve hot with your favorite vegetables, crackers, pretzels, or toasted baguette.
