Sand Dollar Cookies

Makes 24 3-inch cookies

Ingredients

• 2 ¾ cup all-purpose flour
• 1 cup granulated sugar
• ½ teaspoon baking soda
• ½ teaspoon salt
• 1 cup unsalted butter, cubed
• 1 egg, slightly beaten
• 1 teaspoon almond extract 
• ⅓ cup sliced almonds

Instructions

1. Sift flour, sugar, baking soda, and salt together. In a food processor, add flour and cubed butter. Pulse until mixture resembles cornmeal. Add egg and almond extract. Mix well.

2. Shape dough into 1 inch balls and place 2 inches apart on a parchment lined cookie sheet. Flatten with a glass. Place almonds on top of each cookie in a sand dollar design and press down to flatten slightly. Bake at 325 degrees for 15-18 minutes.
