Mickey Santa Waffle

Makes about 8 Mickey waffles

Ingredients:

WAFFLES

• 1 ¾ cups all-purpose flour
• 1 tablespoon sugar
• 1 tablespoon baking powder
• ¼ teaspoon salt
• 1 ¾ cups milk
• 2 eggs, separated
• 2 tablespoons vegetable oil

TOPPINGS

• Fresh raspberries, washed and dried
• Whipped Cream 
• Peppermint sprinkles, if desired

Instructions:

1. Mix batter – Combine flour, sugar, baking powder, and salt in a large bowl. Whisk milk, egg yolks, and oil in a medium bowl. Whisk milk mixture into dry ingredients until dry ingredients are moistened. Do not overmix.
2. Whisk egg whites – Using a stand mixer fitted with a whisk attachment, beat egg whites on medium-high speed until stiff. Fold egg whites into batter.
3. Bake waffles – Preheat waffle maker. Pour ½ cup of batter into a Mickey waffle iron. Spread carefully. Close the top of the waffle maker and bake until golden, about 3 minutes.
4. Create hat – Arrange raspberries in the shape of a Santa hat. See photo below for details.
5. Add whipped cream – Fill a piping bag fitted with a star tip with whipped cream. Alternately, use a can of whipped cream. Add a whipped cream edge at the bottom of the hat and a ball on the top of the Santa hat.
6. Garnish – Add whipped cream around the perimeter of the plate and sprinkle with crushed peppermint candy bits.
