Entertain with Magic
Like Fauna, we aren’t using any magic to bake Briar Rose’s cake, but we do have an easy hack to create this iconic Sleeping Beauty cake. Learn to make it using store bought donuts and a few other common ingredients. This cake was inspired by a recipe in Disney Eats and was served on our Sleeping Beauty Disney dinner.

Dip donuts – Melt the white almond bark according to package directions. Place in a round or square glass bowl. The melted almond bark should be at least 2-inches deep. Dip each donut and allow the excess to drain off. Place on a wire rack and allow the almond bark to harden completely.
Make blue icing – Combine sugar, milk and vanilla. Whisk until smooth. Add in a scant amount of blue gel food coloring until incorporated. Add more as needed. Transfer the icing to a piping bag fitted with a coupler and round tip. Pipe icing on top of the donut, allowing it to drip down the sides. For the donut that is going on top, cover it completely with blue icing.
Make broom – Baste melted chocolate onto a pretzel rod. Carefully allow to harden on a piece of waxed paper. In the meantime, use melted chocolate to adhere the marshmallows together. Use a knife to cut a divot out of the top of the marshmallow tower. Next, roll out the yellow fondant to ¼” thickness. Trim fondant and wrap the sides of the marshmallows completely. Finally, trim the fondant into a rectangle the same height as the marshmallows. Use a knife to cut a ¼” fringe along the bottom 2 inches of the fondant. Place the chocolate pretzel into the divot to create a broom and wrap the fondant fringe around the marshmallows to create the look of broom bristles. Set the broom aside.
Assemble cake – Use frosting or melted chocolate to secure the first donut onto the cake board or cutting board. Carefully stack the donuts. Add a dowel or bamboo skewers to secure the donut layers.
Decorate the cake – Add a scant bit of yellow gel coloring to the vanilla frosting. Combine thoroughly. Add more gel coloring as needed. Add yellow frosting to a piping bag fitted with a coupler and star tip. Pipe rosettes onto the top layer where you want to add candles. Connect the rosettes with yellow frosting bunting. Add pink candles.
