Darth by Chocolate Parfaits: A Sith-fully Decadent Dessert!

"Darth by chocolate" Parfaits
Makes 4 servings
Ingredients
Red Velvet Cake:
- 1 cups dry red velvet cake mix
1/3 cup water
2 ½ tablespoons vegetable oil
1 large eggs
For the Chocolate Fudge Cake:
- 1 cups dry chocolate fudge cake mix
1/3 cup water
2 ½ tablespoons vegetable oil
1 large eggs
For the Dark Chocolate Mousse:
- 4 oz. dark chocolate chips (about ½ cup)
2 ½ tablespoons water
1 tablespoon unsweetened cocoa powder
½ tablespoon granulated sugar
Pinch of sea salt
¾ cup heavy whipping cream, whipped to stiff peaks
For the Milk Chocolate Mousse:
- 4 oz. milk chocolate chips (about ½ cup)
2 ½ tablespoons water
1 tablespoon unsweetened cocoa powder
½ tablespoon granulated sugar
Pinch of sea salt
¾ cup heavy whipping cream, whipped to stiff peaks
For the Cookie Layer:
- 20 Oreo Cookies, crushed in a food processor
For the Chocolate Ganache:
- 1 1/3 cups chocolate chips
1/2 cup whipping cream
For the Topping:
- 1 oz. chocolate jimmies
4 Oreo Cookie Thins, broken into small bits
2 cubes chocolate almond bark
Instructions
For the Red Velvet and Chocolate Cake:
- Preheat the oven to 350 degrees. Prepare two cupcake pans with non stick cooking spray. Pour one cake mix into a medium mixing bowl, add the water, oil and eggs.Mix until combined. Fill cupcake reservoirs ⅔ full with batter. The batter should make approximately 6 cupcakes. Repeat the steps with the other cake mix.
2. Bake both types of cupcakes for 18-20 minutes or until the center springs back when touched. Cool in pans for 2 minutes and place on a wire cooling rack to cool completely.
For the Dark and Milk Chocolate Mousse:
3. Place the milk chocolate chips, water, cocoa, sugar, and salt in a small microwave safe bowl and warm in 30-second intervals until the mixture is melted and smooth. Repeat the process using dark chocolate chips.
4. Transfer each chocolate mixture to a large mixing bowl. Fold in the whipping cream. Set aside.
For the Chocolate Ganache:
5. Place chocolate chips in a medium sized bowl. Warm heavy cream in a small saucepan until simmering but not boiling. Pour warm milk over chocolate chips and allow to sit undisturbed for 5 minutes. Do not stir during this time. Once five minutes has passed, stir until the chocolate is melted and smooth.
For the Darth Vader Heads:
6. Place the chocolate almond bark in a microwave safe bowl and warm in 30-second intervals until the mixture is melted and smooth. Spoon into Darth Vader molds and tap on the countertop to work out any air bubbles. Place in refrigerator to harden for 15-20 minutes. Remove from molds and set aside.
To Assemble:
7. Trim cupcakes to 1-inch deep rounds. Place one red velvet cupcake in the bottom of a 3-inch glass. Top with a 1-inch layer of dark chocolate mousse followed by a chocolate cupcake round and 1-inch layer of milk chocolate mousse. Next pour Oreo crumbles over the top 1-inch deep. Top Oreos with a thin layer of chocolate ganache.
8. To decorate, top with a layer of chocolate jimmies and add Oreo chunks, a Darth Vader head and a mini red light saber. Refrigerate for one hour before serving.
