There is nothing like a fresh garden tomato! Our Caprese salad uses juicy yellow and red tomatoes, fresh basil, and mozzarella. Deliziosa! This recipe was featured on our Luca Disney dinner.
The Caprese salad is an Italian tradition. It was created during the 1920s by a chef at Hotel Quisisana who wanted to pay tribute to everything that was Italy, including its country’s colors. Thus, the Caprese salad featuring red tomatoes, white mozzarella and green basil was born.
Caprese Salad
Serves 4
Ingredients:
- 2 yellow tomatoes, sliced
- 2 red tomatoes, sliced
- 16 oz log of fresh Mozzarella cheese, sliced into rounds
- ¼ cup extra virgin olive oil
- Fresh basil leaves
- Fresly ground salt & pepper
Instructions:
Arrange four tomatoes on each plate with a slice of Mozzarella in between. Top with basil leaves. Drizzle with olive oil and top with freshly ground salt & pepper.
